Roasting Oysters on a Wilmington Grill

What You’ll Need

  • Fresh oysters (in the shell)
  • Heavy-duty gloves or a towel
  • Oyster knife (optional — only for serving)
  • Tongs
  • Melted butter, garlic butter, or preferred toppings (optional)

Step 1: Preheat the Wilmington Grill

  1. Turn all burners on high.
  2. Close the lid and let the Wilmington Grill heat to 450–500°F.
  3. Allow at least 10–15 minutes for it to reach full temperature.

Step 2: Prepare the Oysters

You do not need to shuck raw oysters for roasting.
Just rinse off any dirt or sand.

If you want, you can place them on:

  • A flat roasting tray
  • A sheet of aluminum foil with edges turned up
  • Directly on the grill grates (Wilmington Grills handles this well)

Step 3: Place Oysters on the Wilmington Grill

  1. Set the oyster cups side down so they hold their juices.
  2. Spread them out so heat circulates evenly.
  3. Close the lid.

Step 4: Roast the Oysters

Let them roast 6–10 minutes, depending on size and heat.

You’ll know they’re ready when:

  • The shells pop open on their own
  • You hear light sizzling from inside the shells
  • The oyster inside looks firm and opaque

(If some shells do not open, roast them a few more minutes. Discard any that stay closed.)

Step 5: Remove and Serve

  1. Use tongs and gloves — they are VERY hot.
  2. Dump the roasted oyster into the Wilmington Grill Shucking Table
  3. Open the shells by hand or lightly twist with an oyster knife.
  4. Add toppings if you want:

    • Lemon
    • Hot sauce
    • Garlic butter
    • Cocktail sauce
    • Herb butter
